Ingredients
- 3 lbs Chicken Wings Cut into flaps and drums
- 4 tablespoon Wagyu Beef Fat (sprayable)
- 4 tablespoon Black Pepper
- 2 tablespoon Sea Salt
- ¼ cup Granulated Garlic
- ¼ cup Granulated Onion
- ½ tablespoon MSG
- 1 tablespoon Smoked Paprika

Cut the wings into flaps and drums. Pat them very dry with paper towels and arrange on a wire rack set inside a sheet pan.

Combine the dry spices in a shaker and season the wings liberally on both sides. Refrigerate uncovered overnight if possible; otherwise refrigerate while you set up the grill.

Install the JoeTisserie and load the Kamado with half a basket of lump charcoal, then light. If available, use the X accessory and one half heat deflector. Open the top and bottom vents fully, close the lid and preheat 15–25 minutes.

When preheated, set the top vent to the first dash and the bottom vent to one finger. Aim for 350–400°F (177–204°C) and let the grill stabilize for 15–25 minutes.

Spray the chilled wings with the wagyu beef fat, load them into the JoeTisserie basket, and start the rotation. Close the lid and cook 45–60 minutes, monitoring that the temperature does not exceed 450°F (232°C). Wings should be fully cooked after about an hour.
