Easy Reuben In A Bowl Recipe Ingredients

  • 2 – 10 ounce packages of sliced coleslaw (angel hair style recommended)
  • 3 tablespoons olive oil
  • 2 pounds corned beef, thinly sliced from the deli (or use homemade corned beef)
  • Salt, to taste
  • Pepper, to taste
  • Garlic powder, to taste
  • Butter
  • 1/2 cup Swiss cheese, shredded
  • Thousand Island dressing, for drizzling

Note: Sauerkraut can be used instead of coleslaw if you prefer a tangier Reuben-style bowl.

Easy Reuben In A Bowl Recipe Instructions

  1. Heat a large frying pan over medium heat and add the olive oil. Add the angel hair coleslaw (or sauerkraut if using).
  2. Sauté for 5 to 7 minutes, stirring occasionally, until the cabbage becomes slightly translucent and tender.
  3. Shred or chop the corned beef and add it to the pan with the cabbage.
  4. Season with salt, pepper, and garlic powder, then add a knob of butter.
  5. Cook, stirring, until the corned beef is warmed through and the butter has melted into the mixture.
  6. Sprinkle the shredded Swiss cheese evenly across the top of the cabbage and beef.
  7. Cover the pan briefly or reduce the heat so the cheese melts completely.
  8. Serve immediately, drizzling Thousand Island dressing over each bowl just before eating.
  9. Optional: Enjoy with a Keto Rye Bread Chaffle on the side for an extra sandwich-like experience.

Instructions

 

  • Add olive oil to a large skillet over medium heat, then add the sliced coleslaw or sauerkraut.
  • Sauté 5–7 minutes until the cabbage softens and becomes translucent.
  • Add shredded corned beef to the pan and stir to combine.
  • Season with salt, pepper, and garlic powder, then add butter and cook until melted.
  • Once everything is heated through, sprinkle on the shredded Swiss cheese.
  • When the cheese has fully melted, remove from heat.
  • Serve immediately with a drizzle of Thousand Island dressing.
