When readers asked for St. Patrick’s Day ideas, a Shamrock Shake topped the list. I’m excited to share this version because it’s dairy-free, gluten-free, and vegan. For a boozy option I like to add Baileys Almande, a tasty dairy-free Irish cream liqueur—available at most liquor stores—but you can simply omit it for a non-alcoholic shake.
My favorite dairy-free ice cream for this recipe is Coconut Bliss Vanilla Island, though any vanilla dairy-free ice cream will work. You can find Coconut Bliss at many grocery stores.

How do you make it green?
This shake gets its color from fresh spinach, not food dye. The spinach blends in without affecting the flavor, adding a subtle nutrient boost and a light green hue—perfectly festive and dye-free.
I used a high-speed blender to make these shakes. A good blender makes the texture incredibly smooth; a Vitamix has been a great investment for me. If you don’t have a high-powered model, blend a bit longer until smooth.
This spiked shamrock shake is intentionally sweet—an indulgent treat that’s perfect for celebrating.

I top mine with dairy-free whipped cream; almond- or coconut-based versions both work beautifully.

- ½ cup Baileys Almande liqueur (optional)
- 1 pint dairy-free vanilla ice cream (about 2.5 cups)
- ½ cup almond milk or coconut milk
- ½ cup ice
- ½ cup raw spinach, packed (about a small handful)
- 6 drops peppermint extract
- ½ tsp vanilla extract
- dairy-free whipped cream, for topping (optional)
Instructions
