This cheddar chive biscuit BLT is destined to become your go-to lunch. Try these biscuit tips to bake flakier, better biscuits.

What have BLTs been missing all this time? Biscuits. A flaky cheddar chive biscuit transforms the classic bacon, lettuce, and tomato sandwich into something special: rich, savory, and just a little indulgent.
I’m a BLT devotee — when I’m at a diner I almost always end up ordering a BLT or a BLT club. There’s something irresistible about crisp bacon, cool lettuce, juicy tomato, hot toast and mayo. Swap the toast for a warm, cheesy biscuit and you elevate every bite.
This cheddar chive biscuit BLT delivers on texture and flavor: tender biscuit layers studded with cheddar and chives, paired with smoky bacon and fresh produce. Below are a few straightforward tips to improve your biscuit baking and the recipe to assemble the sandwich.

How to Make Better Biscuits
For reliable biscuit technique, I follow a few basic principles that keep the dough light and flaky:
- Be Gentle. Avoid overworking the dough once liquid is added. Handle it just enough to bring it together so your biscuits stay tender.
- Chill the Fat. Use very cold butter, shortening, or lard. Cold fat creates distinct layers as it melts during baking, yielding flaky biscuits.
- Cut Cleanly. Use a biscuit cutter and press straight down without twisting. A clean edge helps the biscuits rise evenly.
- Freeze Briefly Before Baking. Chilling shaped biscuits in the freezer for 10–20 minutes can improve rise and texture.

If you need extra guidance, many flour companies and baking resources offer help for specific baking questions — a quick call or lookup can answer technique problems.

Cheddar Chive Biscuit BLT Sandwich
Once your cheddar chive biscuits are baked, assembling the BLT is quick. Slice a biscuit in half horizontally, spread a little mayo on the cut sides, then layer bacon, tomato and lettuce. Add more tomato and lettuce if you prefer, or pile on extra bacon — it’s all about what you enjoy.

Biscuit BLT Sandwich
- 1 Biscuit
- 1 teaspoon Mayo
- 3 slices Bacon
- 1 slice Tomato
- 1 piece Iceberg lettuce
Instructions
To make your cheddar chive biscuits
-
Adjust an oven rack to the upper third position and preheat the oven to 425°F (218°C).
-
Cut the cheddar into chunks. In a food processor or bowl, combine the cheese, flour and chopped chives and process or mix until the cheese is finely distributed.
-
Add the heavy cream and pulse or stir until the dough is just moistened. Turn the dough out onto a lightly floured surface.
-
Pat the dough to about 3/4″ to 1″ thick (thinner works well for sandwiches). Use a 2″ biscuit cutter to cut rounds and place them on a parchment-lined baking sheet. Brush the tops with extra heavy cream.
-
Bake 15–18 minutes, until golden brown. Remove from the oven and serve warm. Makes about 12–16 biscuits depending on cutter size.
To assemble the Cheddar Chive Biscuit BLT
-
Slice a biscuit in half horizontally with a sharp knife. Spread mayo on the cut sides, then layer bacon, tomato and lettuce on the bottom half. Close with the top half and enjoy.
