Made from fresh strawberries, a squeeze of lemon and a touch of maple syrup, they’re naturally vegan and gluten-free when prepared without animal products. With only three ingredients and around five minutes of active prep, they’re quick to make and perfect for an afternoon treat.

Strawberries: Use ripe, sweet strawberries for the best flavor. If you have slightly overripe berries, this recipe is a great way to use them up. Frozen strawberries can be substituted, but you may need to adjust the sweetener to taste.

Lemon juice: Freshly squeezed lemon juice brightens the flavor and balances the sweetness. Lime juice works as an alternative, but avoid bottled lemon juice for the best fresh taste.

Maple syrup: Maple syrup adds natural sweetness and keeps the recipe vegan. Adjust the amount to suit the sweetness of your strawberries. If not vegan, you can substitute honey, or use white sugar if you prefer.

How to make strawberry popsicles

1. Hull the strawberries and cut them into quarters.

2. Blend the strawberries in a food processor or the chopping bowl of an immersion blender until smooth. For a smoother texture, strain the purée to remove seeds; for a fuller, whole-fruit texture, leave the seeds in.

3. Cut a lemon in half and juice one half. Add ½ tablespoon of lemon juice to the blended strawberries.

5. Pour the mixture into popsicle molds, insert sticks, and freeze for at least four hours or until fully set.

How to serve

To serve, remove the popsicles from the molds — briefly run the outside of the mold under warm water to loosen them if needed — and enjoy immediately.

How to store

Store the popsicles in an airtight container with a sheet of baking paper between each one to prevent sticking. They’ll keep well in the freezer for up to two months, though they rarely last that long!
