When I shared desserts for Mother’s Day I leaned into bright, fruity flavors. For Father’s Day I wanted something bolder and more savory—beer seemed like the perfect choice. Beer in baked goods, especially paired with chocolate, gives a depth of flavor similar to coffee: it lifts and accentuates the chocolate while contributing its own toasty, malty notes.

I’m not a regular beer drinker, but I found these cupcakes surprisingly delicious. The beer complements the chocolate and adds complexity without overpowering the dessert. You can use any beer you like—stout, lager or something alcohol-free—depending on your taste and the intensity you want.

Start with the pretzel crust. For the best texture, grind the pretzels to fine crumbs—about the same consistency as graham cracker crumbs—so the crust binds and holds together. If your crumbs are too coarse the crust can fall apart, so take an extra minute to powder them evenly.

The frosting is a vanilla buttercream where half of the cream is replaced with beer to create a light beer buttercream. I kept the frosting slightly soft rather than piping tight swirls so it resembles beer foam—pipe a few large and small dollops to mimic frothy bubbles.

Finish each cupcake with white nonpareils, gold sprinkles and a small pretzel to echo the crust and deliver a salty bite with every sweet mouthful.

Salty pretzel crust, beer-flavored chocolate cupcakes, a beer ganache center and beer buttercream combine for a playful, well-balanced dessert that pairs sweet, salty and malty flavors.

Ingredients

Pretzel Crust:

  • 1 and ½ cups pretzel crumbs
  • 6 tablespoons unsalted butter, melted

Beer Chocolate Cupcakes:

  • 1 and ½ cups all-purpose flour
  • 1 and ½ cups granulated sugar
  • ¾ cup dark unsweetened cocoa powder
  • 1 and ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs, room temperature
  • ½ cup vegetable oil
  • ¾ cup buttermilk, room temperature
  • 2 teaspoons pure vanilla extract
  • ½ cup beer (any variety)

Beer Ganache:

  • 1 cup dark chocolate chips
  • ¼ cup beer
  • ¼ cup heavy whipping cream

Beer Buttercream:

  • ½ cup unsalted butter, softened
  • ½ cup hi-ratio shortening
  • ⅛ teaspoon salt
  • 5 cups powdered sugar, sifted
  • ¼ cup heavy whipping cream
  • ¼ cup beer
  • 1 and ½ teaspoons pure vanilla extract
  • Pretzels, for topping
  • White nonpareil sprinkles
  • Gold sprinkles

Instructions

For the Pretzel Crust:

  1. Preheat oven to 350°F and line two 12-cup muffin pans with liners.
  2. Combine pretzel crumbs and melted butter. Press 1–2 tablespoons of the mixture into each liner and bake for 5 minutes. Cool on a wire rack.

For the Beer Chocolate Cupcakes:

  1. In a large bowl, sift and whisk together flour, sugar, cocoa powder, baking powder, baking soda and salt.
  2. In a separate container, whisk eggs, vegetable oil, buttermilk and vanilla. Add the wet mixture to the dry ingredients and whisk until combined. Add beer and mix until smooth; the batter will be thin.
  3. Fill cupcake liners two-thirds full and bake 15–20 minutes, or until a toothpick comes out clean. Cool in the pan for 10 minutes, then transfer to a rack to cool completely.

For the Beer Ganache:

  1. Place chocolate chips, beer and heavy cream in a heatproof bowl.
  2. Heat in 30-second intervals, stirring until smooth. Set aside to cool while you make the buttercream.

For the Beer Buttercream:

  1. Beat butter, shortening and salt on medium speed until light and fluffy, about 5–6 minutes.
  2. With the mixer on low, add half the powdered sugar one cup at a time. Add heavy cream, beer and vanilla, then incorporate the remaining powdered sugar a cup at a time on low speed.
  3. Increase speed to high and whip until light and fluffy, about 5–7 minutes.

Assembly:

  1. Core the center of each cupcake using the bottom of a large piping tip or an apple corer.
  2. Fill each cupcake with beer ganache using a spoon or piping bag.
  3. Transfer buttercream to a piping bag fitted with a large round tip and pipe large and small dollops to mimic beer foam. Garnish with white nonpareils, gold sanding sugar and a small pretzel.

Notes

– For a firmer pretzel crust, grind the pretzels to a fine, graham-cracker-like texture so the crumbs bind well with the butter.
