These turkey quinoa muffins are like little meatloaf bites that are high in protein and only about 100–130 calories each.

Ingredients

  • 1 lb. ground turkey
  • 3/4 cup cooked red quinoa
  • 1/2 cup rolled oats
  • 1 carrot, diced
  • 1 green onion, chopped
  • 1 egg
  • 2 egg whites
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon ground mustard
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat oven to 375°F (190°C). Grease a muffin pan or line with muffin cups.
  2. In a large bowl, combine all ingredients and mix until evenly incorporated.
  3. Form the mixture into balls using about 3 tablespoons per muffin and place them in the prepared muffin tin.
  4. Bake for 35–40 minutes, or until fully cooked through.
  5. Let cool for 5 minutes. Use a knife to loosen the edges (the egg whites can cause slight sticking), then transfer to a rack to finish cooling.
  6. Store in the refrigerator for several days or freeze for longer storage.
