Ripe mashed bananas provide rich sweetness, while a mix of juicy blueberries (I like to combine fresh berries with small wild berries when possible) adds bright fruit flavor throughout. A sprinkling of sparkling sugar on top creates a delightful crunchy finish that stays intact after baking, giving the loaf a polished, bakery-quality appearance.

The crunchy sugar topping is one of those little bakery secrets that elevates simple quick bread into something special. Sparkling sugar or coarse Turbinado sugar will remain crunchy after baking and gives the crust a subtle shimmer. If you prefer a softer top, you can skip the sparkling sugar and the loaf will still be delicious.

Instructions

  • Preheat the oven to 350°F (180°C). Lightly grease a 9×5-inch loaf pan and line it with parchment paper, leaving an overhang for easy removal.
  • In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In a large bowl, whisk the mashed bananas with brown sugar and granulated sugar until combined.
  • Whisk in the eggs, melted butter, sour cream, oil, and vanilla until the mixture is smooth and glossy.
  • Add the dry ingredients and fold gently until almost fully incorporated, leaving a few streaks of flour. Fold in the blueberries carefully so they remain whole as much as possible.
