What’s For Supper? #98 — Salad or Soup?
This week’s meals focus on soups and salads, paired with two slow-cooked and roasted meats for the kids and family members who prefer heartier options. Since it’s a new year, many of us are trying to eat lighter and feel healthier — January is a perfect time to embrace simpler, fresher menus.
Menu Plan This Week
- Monday – Roasted Chicken, Buttered Potatoes, and Shaved Brussels Sprouts & Apple Salad. Roasted chicken is comforting and versatile — leftovers are perfect for soups or salads.
- Tuesday – Curried Chicken Salad served over mixed greens with grilled naan for scooping.
- Wednesday – Slow Cooker Pot Roast with root vegetables and potatoes. Add sliced cucumbers and apple slices for picky eaters and kids who prefer simple sides.
- Thursday – Vegetable Noodle Soup with grilled ham and cheese sandwiches for an easy, cozy dinner.
- Friday – Dinner out — Mom’s night off.
- Saturday – Build-Your-Own Salad night, using fresh toppings and any leftover vegetable noodle soup on the side.
- Sunday – Grilled ribeye with oven-roasted corn on the cob; turn remaining salad ingredients into a hearty chopped salad.
