This Cafe Latte Ice Cream sits comfortably in the middle: it offers a clear coffee presence while remaining undeniably creamy and dessert-like.
The balance between coffee flavor and a rich dairy base is what makes this recipe work. The taste evokes a classic cafe latte — coffee rounded by milk — but in a frozen dessert form. To ensure the ice cream stays sweet and retains a smooth, scoopable texture, a modest amount of sugar is added. Whole milk and heavy cream create a luscious base that’s simple to make at home. If you prefer to reduce fat, you can substitute a lower-fat milk for the whole milk, but be aware the final texture may be slightly less creamy.
For the coffee component I used an instant coffee product that concentrates flavor quickly and dissolves easily in the warm dairy. Instant espresso powder is another excellent option: it blends in without graininess and gives a reliable coffee punch. If you don’t have either, you can infuse the cream with ground coffee or espresso beans. Combine the cream and coffee grounds, bring to a gentle simmer, let it steep briefly, then strain out the grounds. That extra step adds a bit more hands-on time but yields a robust coffee flavor that’s well worth the effort.
This recipe is straightforward and beginner-friendly. There’s no custard-making step here, so you don’t need to temper eggs or worry about curdling. Cafe Latte Ice Cream
1 1/2 cups whole milk
1 1/2 cups heavy cream
3/4 cup sugar
1 tbsp instant coffee or espresso powder
1 1/2 tsp vanilla extract
Combine the milk, heavy cream, and sugar in a large saucepan. Warm the mixture over medium heat, stirring regularly until the sugar has fully dissolved and the mixture is just simmering — avoid boiling. Stir in the instant coffee or espresso powder until it has completely dissolved into the warm dairy. Remove the pan from the heat and stir in the vanilla extract.
Allow the mixture to cool to room temperature, then cover and refrigerate until thoroughly chilled. Proper chilling — ideally several hours or overnight — improves the final texture and flavor.
Once cold, pour the base into your ice cream maker and freeze according to the manufacturer’s instructions. When the ice cream reaches soft-serve consistency, transfer it to a container and freeze until firm, usually several hours, for scoopable results. This recipe makes about 1 1/2 quarts.
