Press each cookie onto the baking sheet, top with sanding sugar or sprinkles, and bake at 375°F (190°C) until the edges are just golden, about 7–10 minutes. Lining the pan with a nonstick baking mat makes cleanup easy and eliminates the need to grease the sheet.

- Beat in the egg, vanilla, almond extract (if using), and salt. Gradually mix in the flour a little at a time—by hand or on low speed—until the dough comes together and pulls away from the bowl.
- Load the dough into your cookie press. If helpful, roll the dough into a skinny log and slide it into the barrel. Consult your press manual for the best loading method. Choose a disk, attach it to the end, and secure the cap.
