Utah’s summer thunderstorms have a way of changing everything. From our balcony we watch storms roll in from the south: dark clouds gather, then a distant rumble becomes a full display of rain and thunder. Those storms bring welcome relief to the dry desert air and invite small comforts—open windows, the smell of wet earth, and a kitchen warm with baking. On a stormy afternoon I decided to bake muffins that matched the mood: simple, comforting, and a little bit special.
I wanted muffins that could be enjoyed one at a time, slowly or in quick succession, depending on how stormy the day felt. Blueberries are an obvious choice for muffins, but I wanted more depth—a warm, toasty note and a subtle crunch to balance the soft crumb. The answer was toasted coconut. Toasting the flakes brought out a nutty warmth and texture that paired beautifully with bright, juicy berries. A touch of coconut extract amplified that flavor without overpowering the muffins.
The result was a batch of muffins that rose tall and light. The crumb stayed tender and moist, with just enough sweetness to be satisfying without feeling like a cupcake. Some blueberries burst in the oven and stained the batter with blue-purple ribbons, while others held their shape and released juicy pops when bitten. We ate a few warm right from the pan and saved the rest for breakfasts and snacks. They didn’t last as long as we expected—too tempting—but every bite felt worth it.
Toasted Coconut Blueberry Muffins

Ingredients
- 3 cups all-purpose flour
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 2/3 cup toasted coconut flakes
- 2 large eggs, room temperature
- 1 cup granulated sugar
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 1/2 teaspoon vanilla extract
- 1 teaspoon coconut extract
- 1 1/2 cups fresh blueberries
- Coarse sugar, for sprinkling (optional)
Method
- Preheat the oven to 425°F (220°C). Prepare two 12-cup muffin tins with non-stick spray or paper liners and set aside.
- In a medium bowl whisk together the dry ingredients: flour, baking powder, salt, cinnamon, and toasted coconut until evenly combined.
- In a separate large bowl or in the bowl of a stand mixer, whisk the eggs and sugar until combined. With the mixer on low, stream in the buttermilk, vegetable oil, vanilla extract, and coconut extract until incorporated. Remove the bowl from the mixer.
- Gently fold the wet ingredients into the dry ingredients by hand until just combined. The batter should be thick and slightly lumpy; avoid overmixing to keep the muffins tender. Carefully fold in the blueberries.
- Use a large cookie scoop or ice cream scoop to fill each muffin cup to the top. Sprinkle a small amount of coarse sugar on each top if desired for extra crunch.
- Bake at 425°F for 5 minutes, then immediately reduce the oven temperature to 375°F (190°C) and bake for an additional 13–15 minutes, or until a toothpick inserted near the center comes out clean and the tops are golden.
- Allow the muffins to cool in the pan for about 10 minutes before transferring to a wire rack to finish cooling. Serve warm or at room temperature.
