  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • ½ cup tahini
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon rose extract (optional)
  • 1 cup white chocolate chips
  • ½ cup raw pistachios, shelled
  • 1 ½ tablespoons dried culinary rose petals

Instructions

  1. Preheat the oven to 350°F (175°C). Coat a 10″ cast iron skillet with 1 tablespoon unsalted butter and set aside.

  5. In a small cup, whisk the egg with the vanilla and rose extract if using. Slowly add to the mixer and blend until fully incorporated.
  6. With the mixer on low, add the dry ingredients gradually and mix until the dough comes together. Scrape the bowl and mix briefly to ensure everything is uniform.
  7. Fold in the white chocolate chips, pistachios and rose petals, reserving a small handful to press on top after baking if desired.
  8. Transfer the dough to the prepared skillet and press it evenly into the pan.
