Ingredients and equipment
The quantities below serve 2 and can be doubled easily for more people.
Ingredients
- 2 tbsp olive oil
- 1/2 small onion, finely diced
- 1 fresh red chilli, deseeded and finely sliced (see note)
- 100g (3.5 oz) pancetta, diced
- 1 x 400g (14 oz) tin of chopped tomatoes
- Salt and freshly ground black pepper
- 1/2 tsp granulated sugar
- 250g (8.8 oz) fresh tagliatelle
- Grated Parmesan, to serve (optional)
Tip: Use half a chilli if you prefer milder heat. If you like it very spicy, leave the seeds in.
Essential equipment
- Large non-stick frying pan
- Wooden spatula
- Large saucepan for the pasta
Instructions
1. Place a large non-stick frying pan over low heat. Add the olive oil and swirl to coat the base. Add the finely diced onion and gently fry for about 5 minutes, stirring occasionally, until the onion is soft and translucent.

2. Increase the heat to medium and add the sliced chilli and diced pancetta. Stir frequently and cook for 5–10 minutes until the pancetta is browned and nicely coloured. Keep an eye on the pan to avoid burning — if the pancetta colours too quickly, lower the heat.
3. Transfer the pancetta, chilli and onion mixture to a bowl. Return the pan to the heat and pour in the chopped tomatoes. Season with salt, pepper and the granulated sugar, then simmer for about 5 minutes, stirring occasionally, until the sauce thickens slightly.

4. While the sauce simmers, cook the tagliatelle in a large pan of boiling salted water according to the package instructions. Reserve a small cup of the starchy pasta water before draining.
5. Return the pancetta mixture to the sauce, stirring to combine. Taste and adjust the seasoning with salt and pepper if needed. Add a splash of the reserved pasta water to loosen and bind the sauce, creating a silky finish.

6. Drain the pasta, divide between two bowls and spoon the sauce generously over the top. Finish with a scattering of grated Parmesan if you like, and serve immediately.

This dish is a great example of how a few simple ingredients can come together quickly to create something deeply satisfying. Even if a pan gets a little more coloured than intended, the bold tomato and pancetta flavours still shine through. It’s a firm family favourite for a reason: fast, filling and full of flavour.

- Return the pancetta mixture to the sauce, stir well and taste. Add a little reserved pasta water to loosen the sauce if needed.
- Drain the pasta, serve topped with the sauce and finish with grated Parmesan if using. Enjoy!
