- While the broccoli cooks, peel the cucumber into long wide strands using a potato peeler. Arrange the cucumber noodles on two plates as a base for the stir-fry.
- Stir the minced garlic and chopped cilantro into the pan, taste and adjust salt if needed. Spoon the chicken and broccoli mixture over the cucumber noodles and serve immediately.
