Ingredients

For mushroom-beef burger

  • 8 ounces mushrooms, minced (about 2 cups)
  • 1 teaspoon avocado oil
  • 1 pound 85–90% lean ground beef
  • 1 teaspoon burger seasoning, plus extra for cooking
  • 1 teaspoon Worcestershire sauce

For burger seasoning

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For mushroom-Swiss topping

  • 1 teaspoon avocado oil
  • 1 sweet yellow onion, thinly sliced
  • 8 ounces mushrooms, sliced
  • 4 slices Swiss cheese

Instructions

  1. Pulse mushrooms in a food processor until finely chopped, similar in size to ground beef. Remove any large unprocessed pieces.
  2. Heat 1 teaspoon oil in a skillet over medium heat. Sauté the minced mushrooms until they release and evaporate their moisture; season lightly with salt and pepper. Transfer to a bowl to cool.
  3. While mushrooms cool, mix the burger seasoning ingredients together in a small bowl (or use your favorite premade blend).
  4. For the topping, heat 1 teaspoon oil over medium-low and sauté the sliced onions and mushrooms until the onions are caramelized, about 20 minutes.
  5. When the minced mushrooms are cool, add the ground beef, burger seasoning, and Worcestershire sauce. Gently combine with your hands, taking care not to overwork the meat.
  6. Shape into 4 even patties, pressing a slight indentation in the center of each to prevent bulging. Sprinkle each patty with a little extra seasoning just before cooking.
  7. Grill or cook in a preheated cast iron skillet with a bit of oil over medium heat until desired doneness, a few minutes per side depending on thickness.
  8. During the last minute of cooking, top each patty with Swiss cheese and the mushroom-onion mixture so the cheese melts. Serve on toasted buns or wrapped in lettuce with your favorite toppings, alongside BUSH’S® Baked Beans.
