Looking for a quick, gluten-free lunch idea that’s fun to make? These gluten-free pizza waffles are simple to prepare, allergy-friendly, and adaptable to dairy-free diets. This recipe was created in partnership with Enjoy Life Foods, and it’s a great option for school lunches, snacks, or an easy dinner.
This idea came to me late one night and I’m glad I wrote it down—I tested several batches and we enjoyed them hot and as leftovers. My husband and boys liked them warmed and cold, with or without sauce, which makes them a versatile addition to our rotation.

Notes on ingredients for these pizza waffles:
- Pizza crust mix – I used Enjoy Life Pizza Crust Mix, which is certified gluten-free and free of the top eight allergens. If you prefer, Pamela’s gluten-free pizza crust mix also works well when you follow the directions in this recipe.
- Cheese – These waffles work with non-dairy shreds (such as Daiya or Violife) or real mozzarella. My family couldn’t tell the difference between dairy and dairy-free versions, so choose what fits your needs.
- Meat – Pepperoni and Italian sausage are great choices. Mini pepperoni slices save time because they don’t need to be cut.

These are cooked in a waffle iron. The amount of batter per waffle depends on your machine’s size and depth. For my iron I used about 1/4 cup of batter on each quadrant—about 1 cup total per full waffle. One box of pizza mix yielded four full waffles (16 wedges), enough for a family lunch.

These waffles are delicious dipped in pizza sauce. Use store-bought sauce or make a simple quick sauce by whisking garlic powder and Italian seasoning into a small can of tomato sauce to taste.

Thanks to Enjoy Life Foods for partnering on this recipe. I appreciate companies that support safe options for people with celiac disease and food allergies.
If your family loves pizza-flavored dishes, consider trying the pepperoni pizza dip recipe as another fun option.

Gluten-free Pizza Waffles
My family couldn’t tell the difference between dairy and dairy-free versions, so use what suits your needs. Cooking time and yield will vary by waffle iron; this recipe produced four full waffles (16 triangles) for my family of four.

Ingredients
- 1 box Enjoy Life Pizza Crust Mix (see note)
- 1 1/2 Tbsp. olive oil
- 1 3/4 cup warm water (100-105°F)
- 1 tsp. garlic powder
- 3/4 tsp. Italian seasoning
- 1/2 tsp. salt
- 1 1/2 cups non-dairy shredded cheese or real mozzarella cheese
- 3/4 cup pepperoni (slices quartered)
- 3/4 cup Italian sausage crumbles
- Pizza sauce for dipping
Instructions
- In the bowl of a stand mixer, combine the pizza crust mix, olive oil, warm water, garlic powder, Italian seasoning, and salt. Mix on low until well combined, then mix on low for one additional minute.
- Add the shredded cheese (or non-dairy alternative) and the meats, then mix on low just until evenly distributed.
- Preheat and lightly oil your waffle iron. Scoop dough onto the iron—amount will vary by machine. For my waffle iron I used 1/4 cup of batter on each quarter for about 1 cup per waffle. Check when the indicator signals done and, if needed, let them finish for another cycle. Watch closely to avoid burning and ensure they are cooked through. Remove waffles carefully.
- Serve warm with pizza sauce or spaghetti sauce for dipping.
- Quick homemade pizza sauce: stir garlic powder and Italian seasoning into one small can of tomato sauce to taste.
Notes
If you can’t find Enjoy Life Pizza Crust Mix, Pamela’s pizza crust mix works well when prepared according to this recipe rather than the box directions.
