This version adds oven-roasted crispy chickpeas for a satisfying crunch and plant-based protein, making it substantial enough for lunch or a light dinner. It’s easy to assemble: roast the chickpeas while you chop the vegetables and whisk the dressing, and you’ll have a vibrant salad on the table in under an hour.

One note about traditional Greek salad: some sources say authentic versions don’t include lettuce. This recipe does include romaine, which adds volume and a fresh crunch, but you can omit it to keep closer to the classic preparation. This salad is written without feta to keep it vegan, but if you enjoy dairy you can easily crumble feta on top for a more traditional flavor.

Right now cucumbers and tomatoes are at their peak, which makes this salad especially flavorful. I often meal-plan dinners and make sure the pantry has staples for simple lunches. With an extra can of chickpeas and a pint of cherry tomatoes on hand, an ordinary lunch salad can be turned into something memorable. The roasted chickpeas provide a toasty, nutty contrast to the crisp vegetables and tangy dressing.

- 1 can chickpeas, drained and rinsed
- 2 tbsp. olive oil (for chickpeas)
- 2 tsp. dried oregano
- 1 tsp. salt (divide between chickpeas and dressing as desired)
- 1/4 tsp. freshly ground black pepper
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1 head romaine lettuce, chopped
- 1 pint cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- Dressing
- 1/3 cup olive oil
- 1/3 cup red wine vinegar
- 1/2 tsp. salt
- 1/2 tbsp. dried oregano
- 1/4 tsp. freshly ground black pepper
- 1 tsp. onion powder
- 1 tsp. garlic powder
- Preheat the oven to 350°F (175°C). Drain and rinse the chickpeas, then pat them very dry with a clean towel to encourage crisping.
- Spread the chickpeas in a single layer on a rimmed baking sheet. Toss with 2 tablespoons olive oil, 2 teaspoons dried oregano, 1 teaspoon salt, 1/4 teaspoon black pepper, 1/2 teaspoon garlic powder, and 1/2 teaspoon onion powder. Roast for 20–30 minutes, shaking the pan occasionally, until the chickpeas are golden and crispy.
- While the chickpeas roast, prepare the salad: chop the romaine into bite-sized pieces, halve the cherry tomatoes, slice the cucumber, and thinly slice the red onion. Combine in a large bowl.
- Make the dressing by whisking together 1/3 cup olive oil, 1/3 cup red wine vinegar, 1/2 teaspoon salt, 1/2 tablespoon dried oregano, 1/4 teaspoon black pepper, 1 teaspoon onion powder, and 1 teaspoon garlic powder until emulsified.
- Pour the dressing over the salad and toss to coat evenly.
- Top the dressed salad with the warm crispy chickpeas and serve immediately.
