To avoid that mid-afternoon worry, I made a batch of these Chocolate Chip Energy Bites so there’s a healthy snack ready as soon as she gets home.
Packed with rolled oats for sustained energy and peanut butter plus flaxseed for protein and healthy fats, these little bites are flavorful, filling, and kid-friendly. They’re quick to prepare and store well in the fridge for several days—perfect for busy afternoons or packed lunches.
Flaxseed is optional but recommended: it’s an easy plant-based source of omega-3s, which can be missing from children’s diets if they don’t eat fish. Buying flaxseed already ground saves time and helps your body absorb the nutrients more effectively.

A quick note about the chocolate chips: they’re not essential and do add a bit of refined sugar, but a small amount can make these bites much more appealing to picky eaters. If you prefer, leave the chocolate chips out—either way the snack remains nutritious.

- 2 tbsp ground flaxseed (optional)

- 2 tbsp desiccated coconut

- ⅓ cup chocolate chips (optional)
Instructions
- Combine the rolled oats, peanut butter, ground flaxseed (if using), honey, desiccated coconut, and vanilla extract in a large bowl. Mix until the ingredients are fully incorporated and the mixture holds together.
- Fold in the chocolate chips, if using. Scoop or roll the mixture into bite-sized balls—about 12–14 depending on the size you prefer.
