
This is one of my favorite quick meals from the Super Simple Series. It’s fast to assemble, simple to make, and balances protein, healthy fats, and carbohydrates. I prefer a specific low-carb, high-fiber whole wheat tortilla (nutrition facts below are based on that choice), but you can use whichever tortilla you like.
These tacos are great to pack for work or an on-the-go lunch. Place the two tortillas in a sandwich bag, the salsa in a small container, and the sliced chicken in another container for an easy assembly at lunchtime. This recipe uses the Avocado Mango Salsa for a bright, sweet-and-spicy flavor combination.

Chicken Mango Salsa Tacos

Ingredients

2 Whole Wheat Tortillas Low Carb, High Fiber -
3 oz Chicken Breast fully cooked, sliced -
1 serving Avocado Mango Salsa
Instructions

Warm the tortillas in the microwave for about 20 seconds and place them on a plate.

Divide the sliced chicken between the two tortillas and top each with the avocado mango salsa.
