Ingredients

  • 1 lb spaghetti noodles
  • 2 Tablespoons butter
  • 8 oz ricotta cheese
  • 16 oz cottage cheese
  • 1/2 cup sour cream
  • 1/2 cup chopped chives
  • 2 lbs ground beef
  • 1 large onion, diced
  • 1 can mushrooms, drained
  • 16 oz marinara or spaghetti sauce
  • 4 oz tomato paste
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350ºF (175ºC).
  2. Cook the spaghetti according to the package instructions until al dente.
  3. Drain the pasta well.
  4. Toss the hot spaghetti with the butter so it absorbs the flavor, then transfer it to a 9×13-inch casserole dish, spreading it evenly.
  5. In a medium bowl, combine the ricotta, cottage cheese, sour cream, and chopped chives. Mix until smooth, then spread this cheese mixture over the layer of spaghetti.
  6. In a skillet, brown the ground beef with the diced onion until the meat is fully cooked and the onion is soft.
  7. Drain any excess fat from the skillet, then add the drained mushrooms, marinara sauce, tomato paste, Italian seasoning, and salt and pepper to taste. Stir to combine and heat through briefly to meld flavors.
  8. Carefully spread the meat sauce over the cheese layer in the casserole dish, covering as evenly as possible.
  9. Cover the dish and bake in the preheated oven for 45 minutes, until heated through and bubbly. Remove the cover for the last 5–10 minutes if you prefer a slightly browned top.
