Why is it called “Bubble Up” Pizza Bake?
The name comes from using canned biscuits as the base. During baking, the biscuit pieces puff and “bubble up,” creating pockets of soft, tender dough beneath the toppings. To ensure the biscuits are cooked through without underdone centers, I like to bake the biscuit layer briefly before adding sauce and toppings. That step reduces the dramatic puffing but guarantees fully baked bread beneath the cheese and toppings.

This recipe is very adaptable — swap or add toppings to your taste. Below are the ingredients I used for this version.
- 1 can (about 16 oz) Pillsbury Grands Homestyle biscuits or any canned biscuits you prefer
- 4 tablespoons salted butter, melted
- 1 tablespoon dried oregano or Italian seasoning
- 1 teaspoon dried parsley flakes
- 5–6 garlic cloves, minced
- 1/2 cup freshly grated Parmesan cheese
- 1 pound Italian sausage, browned and drained
- 14 ounces pizza sauce
- 16 ounces shredded mozzarella cheese
- 6 ounces pepperoni slices
- Optional: any additional pizza toppings you like (onions, bell peppers, mushrooms, olives, etc.)
How to Make Bubble Up Pizza Bake:

Preheat the oven to 400°F (204°C). Start by cutting each biscuit into nine equal pieces and set them aside. Any canned biscuits will work; just cut them into bite-sized portions so they spread evenly in the pan.

In a bowl, melt the butter and stir in the oregano (or Italian seasoning), parsley, minced garlic, and grated Parmesan. Add the biscuit pieces and toss gently to coat. The dough may stick together—using your fingers to separate pieces works well.

Arrange the coated biscuit pieces evenly in a 9×13-inch baking dish. Bake at 400°F for about 12–15 minutes, or until the biscuits are cooked through and beginning to turn golden.

While the biscuits bake, brown the Italian sausage in a skillet, drain any excess fat, and grate the mozzarella. Prepare any other toppings you plan to use.

When the biscuit layer is done, spread the pizza sauce over the top, sprinkle the browned sausage, add any other toppings, then top with shredded mozzarella and arrange the pepperoni slices. Return the dish to the oven and bake another 10–15 minutes, until the cheese is melted, bubbly, and the pepperoni edges are slightly crisp.

Let the casserole rest a few minutes before slicing. I like serving it with a crisp green salad, but it’s hearty and satisfying on its own. This dish is an easy weeknight winner that stretches to feed a family and won’t break the budget.
