Balsamic Garlic Roasted Green Beans & Mushrooms (2 Points)

One of my favorite quick vegetable sides is this Balsamic Garlic Roasted Green Beans and Mushrooms. It’s easy to prepare and full of flavor — the sweet-tart balsamic vinegar gives the vegetables a lovely caramelized finish. I couldn’t get enough. Serve this healthy side with your preferred protein for a complete meal.

Ingredients

  • 1 lb green beanstrimmed
  • 8 oz mushroomssliced
  • 2 tbsp olive oil
  • 1 ½ tbsp balsamic vinegar
  • 6 garlic clovesminced

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Line a large rimmed baking sheet with parchment paper and lightly mist with nonstick spray.
  3. In a large bowl, whisk together the olive oil, balsamic vinegar and minced garlic.
  4. Add the trimmed green beans and sliced mushrooms to the bowl and toss to coat evenly.
  5. Spread the vegetables in a single layer on the prepared pan, season with salt and pepper.
  6. Roast for about 20 minutes, or until the vegetables are well browned and tender, stirring once if needed.

Notes

The recipe yields 4 servings.
