One of my favorite quick vegetable sides is this Balsamic Garlic Roasted Green Beans and Mushrooms. It’s easy to prepare and full of flavor — the sweet-tart balsamic vinegar gives the vegetables a lovely caramelized finish. I couldn’t get enough. Serve this healthy side with your preferred protein for a complete meal.

- 1 lb green beans – trimmed
- 8 oz mushrooms – sliced
- 2 tbsp olive oil
- 1 ½ tbsp balsamic vinegar
- 6 garlic cloves – minced
Instructions
- Preheat oven to 425°F (220°C).
- Line a large rimmed baking sheet with parchment paper and lightly mist with nonstick spray.
- In a large bowl, whisk together the olive oil, balsamic vinegar and minced garlic.
- Add the trimmed green beans and sliced mushrooms to the bowl and toss to coat evenly.
- Spread the vegetables in a single layer on the prepared pan, season with salt and pepper.
- Roast for about 20 minutes, or until the vegetables are well browned and tender, stirring once if needed.

The recipe yields 4 servings.
