The Jamaican beef patty is a dish that brings back vivid childhood memories. I can still picture the first time I learned to read and how exciting it felt to sound out words on the page. That same curiosity and pride carried over when I tried my hand at baking for the first time — and one of the first things I made was beef patties.

Why Jamaican beef patties? Besides being delicious, they combine baking and cooking in one recipe. My aunt G, who is Jamaican, encouraged me to experiment with the seasoning. Her approach was simple: season the meat to your taste. Flavors vary across Jamaica and from shop to shop, so authenticity can mean different things — what matters most is that the patties taste great.

This recipe produces a crisp, flaky pastry that holds up well even after reheating. The secret to the flaky crust is a simple technique called fraisage — smearing the dough and butter together with the palm of your hand to create thin alternating layers of fat and dough. It yields a texture similar to puff pastry without extensive rolling and folding.

The filling is savory with a gentle kick from spices and hot sauce. It’s straightforward to prepare: sauté aromatics, brown the seasoned beef, and simmer until the mixture becomes saucy and concentrated. Once cooled, the filling is spooned into rounds of pastry, sealed, and baked until golden.

My aunt’s tip about seasoning — “there’s no set guideline” — is liberating. Use the herbs and spices you enjoy. This recipe provides a balanced starting point, but feel free to adjust the heat or herbs to suit your palate.

Ingredients

Pastry Dough

  • 2 cups / 240 g all-purpose flour
  • 1 teaspoon turmeric powder
  • 1 heaping teaspoon fine sea salt
  • ¾ cup (12 tablespoons) / 170 g cold butter, cubed
  • ½ cup / 120 ml ice water

Filling

  • ¼ teaspoon dried thyme or ¾ teaspoon fresh, finely chopped
  • ¼ teaspoon chili powder
  • ½ teaspoon dried rosemary or ½ tablespoon fresh, finely chopped
  • 1½ tablespoons hot sauce (adjust to taste)
  • ½ pound / 225 g ground beef
  • 1 tablespoon vegetable, canola, or olive oil
  • ¼ cup / 45 g diced red bell pepper
  • ¼ cup / 40 g diced onion
  • Scant ½ cup / 120 ml water (just enough to cover the meat)

Instructions

Make the Pastry Dough:

  1. In a large bowl, combine the flour, turmeric, and salt.
  2. Add the cold butter and, using your fingertips, rub it into the flour until the butter pieces are about the size of chickpeas. Add the ice water sparingly until the dough begins to come together.
  3. Turn the shaggy dough onto a floured surface. Using the heel of your hand, smear the butter and flour from one side to the other (fraisage) until the dough becomes more cohesive and no large butter chunks remain.
  4. Form the dough into a disk, wrap in plastic, and refrigerate while you prepare the filling.

Make the Filling:

  1. In a small bowl, combine thyme, chili powder, rosemary, and hot sauce. Mix into the ground beef.
  2. Heat oil in a skillet over medium heat. Add the bell pepper and onion and sauté until softened but not browned.
  3. Add the seasoned ground beef, breaking up any clumps. Pour in just enough water to cover the meat (about ½ cup). Season with salt.
  4. Reduce heat and simmer gently for 24–30 minutes, until the meat is tender and the liquid has mostly reduced to a thick sauce. Remove from heat and let cool completely.

Assemble & Bake the Patties:

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Divide the chilled dough in half. Roll out on a floured surface to a thickness that allows you to cut six 5-inch circles from each half. Re-roll scraps as needed.
  3. Place about 1½ tablespoons of cooled filling on the lower half of each dough circle. Keep a small bowl of water nearby to moisten edges.
  4. Brush the edge of the dough with water, fold the top half over, and gently press to seal. Crimp edges with a fork and transfer to the prepared baking sheet. Repeat with remaining dough and filling. Optionally brush each pastry with egg wash for a glossy finish.
  5. Bake 22–25 minutes, until the crust is set and golden. Serve warm.
