Award-winning Chocolate Coconut Cupcakes filled with a coconut-almond center and finished with a light coconut milk frosting—perfect for coconut lovers and sure to become a favorite.

I hit a personal milestone last week: I entered a local cupcake contest and won first place out of 32 entries. I submitted these Chocolate Coconut Cupcakes, each filled with a coconut-almond center and topped with a creamy coconut milk frosting. It was my first baking competition, and the mix of excitement and nerves pushed me to carefully plan a cupcake that balanced texture, flavor, and appearance.

At first I hesitated about entering because of timing and work, but the idea didn’t leave me. I realized I could drop off entries right when submissions opened and take only an hour of vacation from work. I told myself: if the hunters get a morning off, I can take mine to bake. Once I committed, I knew what I wanted to make.

The contest rules judged taste, appearance, and originality. That made me nervous because last year’s winner used a boxed cake mix. I believe in baking from scratch, so I felt added pressure to create something homemade and memorable. I kept thinking about a coconut milk frosting I had admired before and chose to build the cupcakes around a devil’s food style cake paired with coconut elements for contrast.

Because this was a contest, I wanted a standout filling. A mousse would have been delicate and delicious, but refrigeration wasn’t guaranteed during the event. I settled on a cooked coconut-almond filling inspired by the classic German chocolate cake topping—thickened with flour, sweetened, and enriched with coconut milk and toasted shredded coconut, plus chopped almonds for crunch. The cooked filling holds its texture at room temperature and adds a satisfying bite in the center of each cupcake.

For the frosting I created a coconut milk–based buttercream that whips up light as whipped cream but remains stable at room temperature. The coconut milk flavor is subtle, so I enhanced it with a touch of coconut extract to make the coconut presence more noticeable when combined with the chocolate cake. This frosting gave the cupcakes a silky mouthfeel without the need for refrigeration during judging.

My initial test batch showed promise but was slightly dry—likely from a few extra minutes in the oven. Test tasters enjoyed the flavor but suggested the coconut note could be stronger. For the entry batch I switched to a richer chocolate cake approach that included brewed coffee and a bit of extra fat to achieve moist, devil’s-food-like cupcakes with deep chocolate flavor. I might have filled the liners a touch high, producing flatter tops, but the texture and taste were spot on.

The final cupcakes had a nostalgic richness reminiscent of the boxed devil’s food cake I grew up eating—but these are all homemade, with real ingredients and technique. The coconut-almond filling provided a pleasant chew and sweetness, and the coconut milk frosting tied everything together with a delicate, creamy finish.

Winning the contest felt validating and joyful. I’m proud of the flavor balance and the homemade approach. Thanks to everyone who encouraged me along the way—your support meant a lot as I refined the recipe and prepared my entry.

- 2 1/2 cups shredded coconut, toasted
- 1/2 cup chopped almonds
- 1 teaspoon vanilla
Frosting
- 3/4 cup coconut milk
- 1 tablespoon flour
- 3/4 cup (1 + 1/2 sticks) butter, softened
- 3/4 cup granulated sugar
- 1/4 teaspoon coconut extract
Instructions
- Preheat oven to 325°F (162°C). Line two cupcake pans with 24 paper liners.
- In a medium heatproof bowl, combine the chopped chocolate and cocoa powder. Pour in hot coffee and whisk until smooth, then whisk in the milk. Set aside to cool slightly.
- In a small bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large mixing bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy, about 3 minutes.
- Add the eggs one at a time, beating after each addition, then stir in the vanilla.
- Add the dry flour mixture to the butter mixture in three parts, alternating with the chocolate mixture, mixing until just combined.
- Divide batter evenly among the paper liners and bake 18–20 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan for a few minutes, then transfer cupcakes to a wire rack to cool completely.
- To make the filling: In a medium saucepan whisk together the coconut milk, sugar, and flour until smooth. Cook over medium heat, stirring frequently, until the mixture comes to a boil and thickens, about 4–6 minutes.
- Remove from heat and stir in 2 cups of shredded coconut, the chopped almonds, and vanilla. Let the filling cool to room temperature.
- For the frosting: In a small saucepan whisk together the coconut milk and flour. Cook over medium heat, stirring, until the mixture thickens and bubbles for about 4–6 minutes. Remove from heat and cool to room temperature.
- In a large bowl, beat the softened butter and sugar on high speed until light and fluffy, about 5 minutes. Add the cooled coconut milk mixture and coconut extract, and beat on high until the frosting is the texture of whipped cream.
- To assemble: Cut a small hole from the center of each cupcake, careful not to cut through the bottom. Fill the cavity with the coconut-almond filling and replace the piece of cake on top. Frost each cupcake to cover the hole and garnish with the remaining 1/2 cup shredded coconut if desired.
