Ingredients
Oreo Base
- 28 Oreos (1 packet)
- 1/4 cup butter, melted (55g)
Caramel Fudge
- 1 tin sweetened condensed milk (397g)
- 1/3 cup butter (75g)
- 1/4 cup golden syrup (90g)
- 1 teaspoon vanilla extract
- 250 g caramel-filled chocolate (e.g., Rolos or Caramello)

Preheat the oven to 180°C (350°F). Line a 9″ x 9″ (23 cm x 23 cm) baking pan with baking paper or lightly grease it so the bars release easily.

Place the Oreos in a food processor and blitz until they become fine crumbs. Combine the crumbs with the melted butter until evenly moistened.

Press the Oreo mixture firmly and evenly into the base of the prepared pan. Bake for about 15 minutes, then remove and let the base cool to room temperature.

Break the caramel chocolates into pieces. Reserve about 50g and scatter these pieces across the cooled Oreo base.

In a medium saucepan, combine the sweetened condensed milk, golden syrup and butter. Heat gently, stirring, and bring the mixture up to a simmer. Keep stirring to avoid scorching.

As soon as the mixture is nearly boiling, remove it from the heat and stir in the vanilla extract.

Add the remaining caramel chocolates to the warm caramel and stir lightly so the pieces begin to soften and create swirls of chocolate through the caramel, but do not fully melt them.

Pour the caramel over the Oreo base and spread it into an even layer. Cool slightly, then place the pan in the refrigerator for about two hours or until the caramel is set enough to slice into bars.
Notes
Makes roughly 12 large, indulgent pieces or 16–24 regular pieces depending on how you slice them. Store in an airtight container in the fridge for best texture; bring to room temperature briefly before serving if you prefer a softer bite.
