Ingredients

  • 1 cup flour

  • 1 cup sugar

  • 4 large eggs

  • ¼ cup chocolate spread

  • 1/3 cup butter

  • 3 tablespoons bitter cocoa powder

  • 2 teaspoons baking powder

  • A pinch of salt

  • 1 pound ripe or very-ripe plums, coarsely chopped

Directions

  • Preheat the oven to 350°F (175°C). Line and lightly grease an ovenproof loaf pan.
  • In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder and a pinch of salt until evenly combined.
  • In a separate bowl, whisk the eggs with a pinch of salt for about 2 minutes, until slightly frothy (an electric whisk works well).
  • Pour the eggs into the dry ingredients and mix gently until just combined.
  • In a small saucepan over low heat, melt the butter. Stir in the chocolate spread and cook for about 2 minutes until smooth.
  • Add the melted chocolate and butter mixture to the batter and mix until uniform. Fold in the coarsely chopped plums.
  • Transfer the batter to the prepared loaf pan and bake for about 40 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Notes

  • Let the cake cool before slicing to preserve its texture.
  • For serving, drizzle slices with maple syrup and garnish with fresh blueberries and chopped nuts if desired.
