Do you need protein powder?
If you use thick Greek yogurt, the bites will already be higher in protein and you can skip protein powder. For coconut yogurt or other lower-protein alternatives, add protein powder or stir in hemp seeds for extra protein and healthy fats. Choose a flavor you like, as it will affect the final taste.

Easy date caramel
Date caramel is a creamy, whole-food alternative to traditional caramel. Blend soaked Medjool dates with nut butter, a little coconut oil, warm milk (or milk alternative), vanilla, and a pinch of sea salt until smooth. Adjust liquid sparingly to avoid thinning it too much. Store in an airtight container in the fridge.
Steps to make caramel apple yogurt clusters
- Prepare the date caramel: soak the dates in hot water for about 15 minutes, drain, then blend with nut butter, melted coconut oil, a little warm milk, vanilla, and a pinch of sea salt until creamy. Add liquid a tablespoon at a time to reach the right consistency.
- Mix the yogurt base: combine thick yogurt, nut butter, maple syrup, protein powder (if using), vanilla, sea salt, and apple pie spice. Fold in finely diced apples.
- Assemble the bites: use a cookie scoop to portion the yogurt mixture onto a lined baking sheet. Add a small dollop of date caramel to the center of each scoop.
- Freeze: place the tray in the freezer for 3–4 hours until fully solid.
- Coat with chocolate: melt chocolate with a teaspoon or two of coconut oil to thin. Quickly dip each frozen cluster into the chocolate, return them to the tray, and freeze for another hour or two.

For a creamier interior, after the clusters have frozen and been coated, store them in an airtight container in the fridge and enjoy within a few days. For longer storage, keep them frozen in an airtight container; let them sit a few minutes at room temperature before eating if you prefer a softer texture.

Ingredients
Date caramel
- 1 cup Medjool dates, pitted (soaked in hot water 15 minutes)
- 1 tbsp melted coconut or avocado oil
- 2 tbsp nut butter (almond or cashew)
- 2 tbsp maple syrup
- 1/3 cup milk of choice (warm slightly if needed)
- 1 tsp vanilla extract & pinch sea salt
- 1/2-1 tsp cinnamon (optional)
Yogurt bites
- 3/4 cup thick Greek or coconut yogurt
- 1 apple, diced very small
- 2 tbsp protein powder (optional)
- 2 tbsp almond or cashew butter
- 2 tbsp maple syrup
- 1 tsp vanilla extract & pinch sea salt
- 1 tsp apple pie spice (or cinnamon + 1/4 tsp nutmeg)
Chocolate shell
- 1 cup chocolate chips
- 1-2 tsp coconut oil (to thin chocolate)
Instructions

Soak pitted dates in hot water 15 minutes, drain, and add to a food processor with nut butter, coconut oil, maple syrup, vanilla, salt, and 2 tablespoons of warm milk. Blend until smooth, scraping the sides and adding more milk 1 tablespoon at a time only if needed to reach a creamy caramel consistency.

Transfer to an airtight container and refrigerate until ready to use.
Yogurt clusters

In a bowl, stir together yogurt, nut butter, maple syrup, protein powder (if using), vanilla, sea salt, and spices. Fold in the diced apples and taste, adjusting sweetness if necessary.

Scoop the mixture onto a lined baking sheet using a cookie scoop. Add a small dollop of date caramel to the center of each scoop. Freeze for 3–4 hours until solid.

Melt chocolate with coconut oil using a double boiler or short microwave bursts, stirring until smooth. Quickly dip each frozen cluster in the chocolate and return to the tray.

Freeze the coated clusters for another hour or two, then store in an airtight container in the fridge for a few days or in the freezer for longer storage.
