Happy summer, everyone! What a spring it has been. I hope you and your loved ones are safe and well. Today we wrap up the last day of school, and I have to say we’re all breathing a sigh of relief. Homeschooling brought its challenges, but it also brought unexpected blessings.
As in past years, my weekly menu plans shift for the summer. Instead of six dinner choices, I’ll share five—focused on quick, simple meals that keep evenings stress-free. At the bottom of each post I’ll highlight a few recipes that travel well for potlucks, campouts, or picnics. Summer is full of those gatherings, even if this year they may look a little different as we adapt to a new normal. Stay safe out there!
