Is Coleslaw Good For You?
Cabbage is the primary ingredient in coleslaw. As a cruciferous vegetable, cabbage shares nutritional benefits with broccoli, cauliflower, and Brussels sprouts. These vegetables are nutrient-dense and commonly recommended on ketogenic and low-carb diets. Cabbage contains vitamins, fiber, and compounds associated with long-term health benefits.
Raw or lightly prepared cabbage retains more of its delicate myrosinase enzymes, which contribute to some of its protective properties. Red cabbage, often included in slaw mixes, contains higher levels of polyphenols than green cabbage, offering additional antioxidant benefits.
Some Cooking Tips You Might Enjoy
When browning the ground beef, dice the onion and add it at the same time so the onion softens without burning. Aim for softened, translucent onion — not charred bits — to keep the texture pleasant in the final dish.

When you add the dry slaw to the frying pan, it may initially seem to overflow the pan. Don’t worry — the cabbage will quickly cook down as it softens. Give it a few minutes to reduce in volume before stirring vigorously.

Once the cabbage has cooked down to a reasonable size, add the mayonnaise and Dijon mustard mixture. Mayonnaise can separate if overheated, so add the dressing and toss quickly over low to medium heat to incorporate without cooking it for too long.

If you’d like to add an extra savory finish, grate some Parmesan over the top just before serving. The cheese adds a pleasant salty bite and pairs well with the creamy dressing.
